Ingredients:
For the pastry:
- 250g plain flour
- 125g cold butter, cubed
- Pinch of salt
- Cold water, to bind
For the filling:
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 340g can corned beef, diced
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato ketchup
- Salt and pepper, to taste
Instructions:
-
Prepare the pastry: In a large mixing bowl, combine the flour, salt, and cold butter. Rub the butter into the flour until the mixture resembles breadcrumbs. Add a little cold water and mix until the dough comes together. Wrap the dough in cling film and chill in the fridge for 30 minutes.
-
Preheat the oven: Preheat your oven to 200°C (180°C fan).
-
Prepare the filling: Heat the vegetable oil in a frying pan over medium heat. Add the chopped onion and cook until soft and translucent. Add the diced corned beef, Worcestershire sauce, tomato ketchup, salt, and pepper. Stir well to combine and cook for another 2-3 minutes. Remove from heat and set aside to cool slightly.
-
Assemble the pie: Roll out two-thirds of the pastry on a lightly floured surface to line a 20cm pie dish. Spoon the corned beef mixture into the pastry-lined dish. Roll out the remaining pastry to make the pie lid. Brush the edges of the pastry with water and place the lid on top. Press the edges to seal and trim off any excess pastry.
-
Bake the pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the pastry is golden and crisp.
-
Serve: Remove the pie from the oven and allow it to cool slightly before serving. Serve the corned beef pie hot, with your favorite sides, such as mashed potatoes and peas.
